Moka Po is a tool used for extracting coffee, commonly used in European and Latin American countries, and referred to as the “Italian drip filter” in the United States. The earliest moka pot was manufactured by Italian Alfonso Bialetti in 1933. Initially, he only opened a studio producing aluminum products, but 14 years later, in 1933, he was inspired to invent MokaExpress, also known as the moka pot.

Mocha pots are used to brew coffee by heating the base, but strictly speaking, the coffee liquid extracted from mocha pots cannot be considered as Italian espresso, but rather close to the drip type. However, the coffee made from mocha pots still has the concentration and flavor of Italian espresso, and the freedom of Italian coffee can be achieved at home with a simple method.

Working Principle of Mocha Pot

The mocha coffee maker is made of aluminum or stainless steel and is divided into upper and lower parts. The middle part is connected by a conduit, which is used to hold water in the lower pot. The pot body has a pressure relief valve that automatically releases pressure when there is too much pressure.

The working principle of a mocha pot is to place the pot on the stove and heat it. The water in the lower pot boils and converts it into steam. The pressure generated by the steam when the water boils is used to push hot water from the conduit into the powder tank where ground coffee is stored. After being filtered through a filter, it flows into the upper pot.

The pressure for extracting Italian coffee is 7-9 bar, while the pressure for extracting coffee from a mocha pot is only 1 bar. Although the pressure in a mocha pot is much lower, when heated, it can still generate enough pressure to help cook coffee.

Compared to other coffee utensils, you can get a cup of Italian espresso with just 1 bar. The mocha pot can be said to be very convenient. If you want to drink more flavorful coffee, you just need to add an appropriate amount of water or milk to the brewed espresso as needed.

What kind of beans are suitable for mocha pots

From the working principle of a mocha pot, it uses the high temperature and pressure generated by steam to extract coffee, and “high temperature and pressure” is not suitable for making single grade coffee, but only for Espresso. The correct choice for coffee beans should be to use Italian blended beans, and its requirements for baking and grinding are completely different from those for single grade coffee beans.

What should I pay attention to when using a mocha pot?

① When filling water in a mocha coffee pot, the water level should not exceed the position of the pressure relief valve.

② Do not directly touch the body of the mocha pot after heating to avoid burns.

③ If the coffee liquid is sprayed out in an explosive manner, it indicates that the water temperature is too high. Conversely, if it flows out too slowly, it indicates that the water temperature is too low and the fire needs to be increased.

④ Safety: Due to pressure, attention should be paid to controlling the temperature during cooking.

 

The coffee extracted from a mocha pot has a strong taste, a combination of acidity and bitterness, and a greasy layer, making it the closest coffee utensil to espresso. It is also very convenient to use, as long as milk is added to the extracted coffee liquid, it is a perfect latte.
